Navarrico Marinated Artichokes

These artichokes are partially cooked before the leaves are removed and the hearts trimmed by hand. Then they are marinated in sunflower oil, white wine vinegar, parsley and basil, giving them a tender texture and a nutty, citrussy flavour. Serve in a cold tapa with Ortiz anchovy fillets, in salads, as a pizza topping or quickly roast them on a griddle.
