I think it was Sybil Kapoor who once wrote something like "Amaze yourself with your own good taste" when you buy Ortiz tuna. She was right. Bonito del norte is the top grade of tuna. Pale pinky white, low fat with a very delicate flavour, Ortiz bonito is caught using the most ecological method, by rod and line using live bait. Cut, filleted and packed by hand. Once you've tried it, you'll be lost - no other canned tuna touches it for flavour and texture.

Conservas Ortiz is a family-run business which was established over 100 years ago in a Basque fishing village on the north coast of Spain. Their fish is of the finest provenance, processed under extremely exacting criteria, much of the process still being done by hand. The fish is line caught on traditional fishing boats, making it dolphin-friendly. The bonito is actually caught using rods and live bait (pole and line method), which is the most selective and ecological method, and one that brings in the highest quality fish.
