Maggie Beer is one of my Food Heroes. I love watching her on MasterChef Australia to which I am addicted.

Years ago I used to sell Maggie's Verjuice and then it disappeared off UK shelves.  Now it's back in two sizes along with her delicious Vin Cotto. 

Made from the juice of unfermented grapes, Verjuice can be used as a gentle acidulant wherever you might find lemon juice or vinegar too tart - which means whenever you want the gentlest bite of flavour.  Verjuice can be used in salad dressings, deglazing the pan when cooking fish and chicken or poaching dried fruit to serve with a glossy dollop of mascarpone. It's even versatile enough to form the basis of sophisticated mocktails.
