The De Carlo family mill make their extra virgin oil from hand-picked, organically grown Ogliarola olives from their estate in Puglia, southern Italy. The oil is made by stone grinding 40kg of really fresh local cerified organic lemons together with 100kg of their organically grown olives.
The Ogliarola olive is an old-fashioned Puglia variety producing an unusually sweet and subtle oil, which complements the delicate citrus flavour and perfume of the lemons. A delicious seasoning for fish, white meat, steamed and grilled vegetables, it can also be used in sauces and salad dressings.
