Aged Balsamic Vinegar is thicker, sweeter and more aromatic than matured balsamic vinegar, due to a longer reducing and ageing period in these wooden barrels.
The ageing process must be between four and twelve years but this cannot be specified on the label as there can be considerable variation in production methods. In 2005 our reserved barrels had been aged for six years. Free of pesticides and preservatives, this is the earliest batch of certified organic balsamic vinegar that our producer, who is from one of the oldest vinegar producing families in Modena, deems to have “come of age”.
Use this as a seasoning on cooked meats, such as duck and lamb. It is also a delicious addition to salads, fresh fruit and mild creamy cheeses. Summer strawberries are particularly good marinated in our balsamic vinegar.
