This balsamic vinegar of Modena, though not aged, has a really thick consistency. Most balsamic glazes on the market contain caramel colouring and thickening agents to achieve the consistency of a glaze, but ours is concentrated and condensed using natural methods and in compliance with the disciplines governing Modena’s balsamic vinegar production.
Made with lambrusco di sorbara grapes from Davide Maletti’s estate owned Due Vittorie vineyards, in the province of Modena, this is the finest chef’s balsamic glaze and perfect for enhancing the flavour and presentation of both sweet and savoury dishes.
Ingredients - cooked grape must, wine vinegar. 6% acidity (does not contain sulphites)
