'Nicknamed ‘the money muscle’, it is marbled and tender with a full-flavoured taste.
The coppa is a popular and widespread product throughout Italy; depending on the region it also takes the name of capocollo or ossocollo. The pork is salted and massaged to distribute the salt evenly, then it is left to mature for several months. A speciality with a mild yet full-flavoured taste, very much appreciated for its sweetness and its classic aroma.
