This fragrant recipe of Baharat is very close to what Hanan Samara’s Mum used to make, and hence its name: Mama’s Baharat - an essential everyday spice mix to cook with. It contains an infusion of flavours of no less than 18 ingredients of herbs and spices such as coriander, cumin, dill, cinnamon, allspice, nutmeg, cardamom and caraway seeds and is an essential staple in every Arabian spice rack.

Mama’s Baharat versatile spice mix transforms everyday meals into something truly special. Use it to season Freekeh, bulgur, rice, stews, soups, sauces, vegetables and even bread and cakes. It is also often used to marinate lamb, chicken and fish - simply mix with olive oil, yoghurt, lemon juice and some garlic and leave to infuse before cooking.
