Kecap (often also spelt Kicap or Ketjap) Manis is an Indonesian sweet soy sauce with a molasses consistency and a dark brown colour. Flavoured with garlic, star anise, soybeans, and palm sugar, the sauce is more syrupy and complex than commonplace soy sauce. It still has distinctive salty-fermented notes, but as it is sweetened with palm sugar, and has stronger flavours than traditional Chinese soy sauce, for me it has more uses. It is served as a condiment as well as being used as a cooking ingredient in traditional South East Asian dishes. I often use it to juzzy up foods that need a bit of a lift.
