This classic Colomba cake is also known as Colomba di Pasaqua, which is Italian for Easter dove. A rich, fluffy cake studded with candied fruit, baked in the shape of a dove and topped with almond paste, this cake is traditionally made on Good Friday and is eaten around Italy all Easter weekend. First made in Milan, this citrussy Colomba cake is loved for its flavour and texture. Traditionally served with fresh red berries, whipped cream and ladle of Zabaglione, enjoy with a cappuccino or with something sparkling!
