Colomba Pasquale (Easter Dove) is a traditional Italian sweet yeast bread, serving as the spring counterpart to Christmas panettone. Its dove shape symbolises peace and renewal. It is a naturally leavened cake with a fluffy texture, made with flour, eggs, butter, and candied orange peel, though often with no raisins, unlike panettone. It is topped with a sugary glaze with crunchy pearl sugar and almonds.

Starting with the 72-hour sour dough production process, butter, flour, eggs and vanilla pods are expertly mixed to form the irregular crumb typical of natural leavening. Cubes of candied orange peel enrich and scent the soft dough with a delicate taste. The glaze is rich and crunchy, obtained by mixing almonds with sugar and egg white. Each colomba is hand-wrapped with opaque velvety printed paper and softened by an elegant grosgrain ribbon with gold brand marks.
