The olives are first stone ground in the De Carlo mill and the freshly crushed organically grown garlic cloves are immersed for some days in the extra virgin oil. Once the essential pervasive garlic aroma and flavour is thoroughly infused and absorbed, the oil is filtered through fine muslin and bottled.
Since its infused flavours are softer than those of raw garlic, this oil makes an excellent and mellow addition to delicate dishes or raw food; it can also be used in sauces or for cooking to give a touch of liveliness.
