The Nocellara del Belice is a variety of olive that originated in the valley on the edge of the Ravida farm, and is still most famed for the style of oil that it produces. Ripening tomatoes, peppermint and fresh eucalyptus are all apparent in the aroma of this verdant, punchy oil. The flavours of bitter raw artichoke, fresh radicchio and finish of spicy red chili pepper fill the mouth and would pair wonderfully with a simple tomato salad or over steak or hearty stews.
