DESCRIPTION
This is a traditional Panforte di Siena, produced by a family bakery in the province of Siena. The famous Sienese speciality, panforte, is a rich, chewy, spicy hand-flattened cake made with candied citrus fruits, sugar, honey and spices. These ingredients are heated to a boiling paste, before adding freshly toasted almonds, flour and cooling the paste enough to hand shape into the traditional flat round shape.
It is said that the nuns of a medieval convent near Siena originally invented panforte in honour of a visiting pope, who received it well and commended the recipe. Once made and sold by apothecaries, the spice merchants of medieval Italy, it has now become a famous local speciality of Tuscany, and in particular Siena.
SERVING SUGGESTIONS
Because panforte is highly concentrated and rich, it is traditionally sliced into very thin wedges. It pairs brilliantly with:
- Beverages: Strong espresso, black tea, or sweet Italian dessert wines like Vin Santo.
- Cheese Boards: Exceptional when served alongside soft, creamy cheeses (like Gorgonzola, goat's cheese, or Brie) or hard, salty cheeses.
- Dessert Accompaniments: Lightly crumbled or sliced alongside a scoop of vanilla ice cream.
